guilty pleasure coffee drink


so maybe it's just me, but this drink i just created is delish! i love iced coffee--well really sweet, creamy iced coffee that is. i'm not a coffee drinker like my hubby. it pumps through his veins..he drinks a pot before bed..need i say more? well i like a good coffee drink on occasion. i always wanted to love coffee because i love the smell of coffee. when i worked at an upscale salon in columbia, i drank a cup of coffee, well let's start over. i started with 3 of those little blue containers of vanilla cream and then poured in my coffee. once again..it's that light coffee taste with lots of creamy, sugary flavor that i love.

while sorting through recipes of iced coffee online, i came to find that 'the best' recipes were time consuming. not hard. time consuming. and if there's one thing i don't wait to do, it's wait. my husband will tell you i am very impatient. he's the best for keeping me around :) so i was annoyed because all i wanted to so was use my hubby's leftover coffee in the mornings to make what i wanted. i experimented and got exactly what i wanted! here's what i used. oh and also, while trying to make real  whipped cream, i used half and half instead and it didn't work..but still added it to my drink..you'll see..added that creamy-ness i was looking for :)
  • 6 oz. brewed coffee-what micah had left in the pot!
  • 3 oz. or so milk (we are out of skim, so i used tag's whole) once again adding to the richness..and fat ;)
  • butterscotch caramel ice cream topping (any syrup would work)
  • 1/3 cup half and half
  • some honey
 coffee--still very warm

 adding 2 spoons of the syrup..of course i licked the spoon..

 put in the freezer for an hour or so to chill. next to the shrimp is fine :)

 so here's where i went wrong. i know you need heavy cream to make real whipped cream, but i thought i'd try half & half anyway. 1/3 cup half and half to a big squeeze of honey to sweeten it. i mixed it with my whisk beater..it at least blended it really well! but i still used it. put it in the fridge while the coffee was getting cold.

 after an hour or so, pulled out the coffee, added ice cubes and the sweet, creamy half & half.


yummy. crew kicks in agreement!
